how to make a banging pão de ló:

ingredients:

mix eggs + egg yolks + sugar

beat until it doubles in size and gets much paler/more airy (about 10ish minutes with an electric mixer, or 30 minutes of good ol whisking)

add (sieved) flour SLOWLY! a little bit at a time, and fold it into the mix each time, nice and carefully, so you don't lose the airy-ness of the batter

slam it into a preheated over at 200C for 10ish minutes (here's the crucial bit. you don't want it to bake all the way. we're making this ovar style which means keeping the top of the batter half-baked so we get the most orgasmic doce de ovos in the world. so you wanna keep it in the oven until the top gets a little golden and toasted, and so that, when you wiggle the pan, the top is (thinly) baked solid but you can see the batter jiggling underneath. i am still working on perfecting this timing. i belive in you. do NOT fuck it up.)

take it out and let it sit and settle for about 4 hours (again, do NOT fuck it up by eating it immediately. the doce de ovos will be subpar. you will go to hell and i will be there to smack you. leave it BE.)
